This gluten-free coffee cake combines these classic flavours in a cake that partners perfectly with an afternoon coffee.

Made gluten-free using our Queen St. Bakery 1-for-1 Superfood Baking Flour as a substitute for regular wheat flour.

Sierra’s Apple Cinnamon Almond Cake (Gluten Free)
Ingredients
  • 2 medium apples, peeled and chopped
  • ½ cup chopped brown sugar
  • cup QSB 1-for-1 Superfood Baking Flour
  • ½ cup almond flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp sea salt
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/3 cup melted coconut oil
  • 1/4 cup slivered almonds
 

Directions

1. Pre-heat oven to 350F.

2. Grease a round pie pan with oil and put aside.

3. In a medium bowl, mix together brown sugar, flours, cinnamon, baking powder, salt, vanilla, eggs and coconut oil.

4. Fold in one of the chopped apples, then pour in the batter into the pie pan.

5. Top the batter with the rest of the apples, almond slices and a bit more brown sugar.

6. Bake for 60 minutes and enjoy with a warm cup of coffee.
