Giant Heart-Shaped Valentine's Day Chocolate Chip Cookies (gluten-free, nut-free, dairy-free option)
INGREDIENTS:
- 1 cup unsalted butter, softened (use vegan butter for dairy-free option)
- 1 1/2 cups brown sugar
- 2 tsp vanilla extract
- 2 eggs
- 2 1/2 cups Queen Street Bakery 1-for-1 Superfood Baking Flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2 cups chocolate chips (use vegan chocolate chips for dairy-free option)
INSTRUCTIONS:
- In a large bowl, cream butter, brown sugar, and vanilla extract together using a hand mixer until light and fluffy. Beat in eggs, one at a time, until well combined.
- In a medium bowl, sift together Queen Street Bakery 1-for-1 Superfood Baking Flour, baking powder, and salt. Slowly add into butter mixture and beat until a dough forms. Fold in chocolate chips.
- Cover bowl with a tea towel and place in the fridge for 30 minutes to cool. Don't skip this step! This will help the cookies be extra chewy and delicious.
- Preheat oven to 375F. Line a baking sheet with a reusable silicone mat or parchment paper.
- Using a small cookie scoop, scoop 2 small scoops of cookie dough onto the baking sheet right net to each other. Using clean hands, grab a small amount of dough from the bowl (about half the size of the cookie scoop) and place it underneath the 2 touching scoops of dough. Using your clean fingers, gently press and shape the cookie dough balls together to form a heart. See GIF below instructions for example.
- Repeat with remaining dough leaving 2" between each heart-shaped cookie. Bake for 12-15 minutes until lightly golden and set.
- Allow to cool for 5-10 minutes before enjoying warm, or cool completely and store in an airtight container.
