Daniella's Italian Herb Sandwich with Grilled Veggies (gluten-free, vegetarian, nut-free)

With summer right around the corner, we're dreaming up new and delicious ways to celebrate. What better way than a grilled veggie sandwich, perfect for those hot summer days by the grill!

This recipe features our Queen Street Bakery White Bean & Millet Seed Loaf, the perfect gluten-free loaf that tastes like the white bread you love, with the nutrition you need. Made with two naturally gluten-free superfoods; white beans and millet seed, this flour gives you 8x the fibre than regular white bread, so you can feel good about every bite.

Now, let's get to the good stuff. Without further ado, here's the recipe you've been waiting for:

 

Daniella's Italian Herb Sandwich with Grilled Veggies (gluten-free, vegetarian, nut-free)

INGREDIENTS:

ITALIAN HERB OIL

1 tablespoon olive oil

1/2 teaspoon EACH dried parsley & dried oregano

1/8 teaspoon EACH garlic powder & onion powder

pinch of EACH salt & red pepper flakes *optional*

 

GRILLED VEGGIE SANDWICH

1 tablespoon EACH olive oil & balsamic vinegar

1/4 medium red onion cut and sliced

1 garlic clove, minced

1/2 medium zucchini sliced

1/4 medium eggplant sliced

1/4 yellow pepper, sliced

1/4 red pepper, sliced

1 pinch EACH salt, pepper, & dried oregano

2 slices of Queen Street Bakery White Bean & Millet Seed bread

2 slices fresh mozzarella

 

INSTRUCTIONS:

In a small bowl, combine the olive oil, dried parsley, dried oregano, garlic powder, onion powder, salt, and red pepper flakes. Set it aside at room temperature until it is ready to use.

In a bowl, add red onion, garlic, zucchini, eggplant and bell peppers. Then add olive oil, balsamic vinegar, salt, pepper, and dried oregano. Toss the vegetables until each piece is coated.

Add vegetables to a hot pan and cook for 5 minutes on each side or until they are caramelized and tender. Then take them off the grill and place them into a clean bowl.

Toast the two pieces of bread to your liking.

To assemble your sandwich, start by smearing the Italian herb oil on one side of the two slices of bread. Next, layer the sandwich with the grilled vegetables and top with sliced mozzarella. Enjoy!
